For the love of going gluten free.


I do not have issues with Gluten! In fact I downright adore pretty much anything with gluten in it. I mean what would life be without bread? It would be a barren wasteland if I never got to smell a loaf of fresh baked bread again. I do however have friends who are gluten allergic/intolerant or paranoid of being either of those two. It was for these friends sake that I decided to create a quick and easy gluten free wrap that actually tastes good and doesn’t fall apart under pressure. I also coach and am friends with a large number of fitness competitors and bodybuilders who are always looking at ways to lighten up on the carb count during contest prep, so this came in handy for them as well.

I read what seemed like a million recipes for low carb flatbreads. So many of them had a ton of weird ingredients and I think most of my readers would pass them by. I wanted to give you guys a simple recipe with just a few healthy ingredients that you could whip up in just a few minutes. That’s pretty nice of me considering I’m all about the bread, the bread… oops that’s the bass isn’t it? Well, if you eat less bread and more of these delicious wraps you’ll have a smaller “bass” in no time.

Low carb Flatbread, Gluten free

Ingredients: (1 wrap)

  • 1 x egg

  • 2 tablespoon almond meal flour

  • pinch sea salt

  • pinch dried chillies

Instructions:

  1. Place a frying pan on a medium/high heat.

  2. Whisk everything together and pour into the frying pan.

  3. Swirl the pan to get everything even, like you would with a crepe. When you can see bubbles that set on the surface flip the flatbread over.

  4. Cook till golden brown on both sides.

  5. Use right away or allow to cool under a cloth to keep it soft.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
