Philly Cheesesteak Foil Packs


Looking for a great idea for camp? This ones a keeper. For even fuller flavour, prepare packets in the morning then go fishing or for a quad ride. Once you're back at camp, fire up the BBQ and dinner is ready in 20 minutes. Load up your packet onto a toasted bun and you'll have plenty of time after to relax and crack a few beers. 

Serves: 4

INGREDIENTS:


1 lb. flank steak, thinly sliced


2 bell peppers, thinly sliced


1/2 onion, thinly sliced


2 cloves garlic, minced


2 tbsp. Italian seasoning


2 tbsp. extra-virgin olive oil


kosher salt


Freshly ground black pepper


4 slices provolone


Chopped fresh parsley, for garnish

DIRECTIONS: Heat grill to medium-high. In a large bowl, toss together steak, peppers, onion, garlic, Italian seasoning, and olive oil and season with salt and pepper.

Place steak mixture in foil packs. Fold up packs and grill, 10 minutes. Open packs, top with provolone, and cover grill to melt, 2 minutes.

Garnish with parsley and serve.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
