Simple Blueberry Topping


There's not too many things in life better than freshly picked blueberries. Every year I pick a ton so that I can freeze some and have them throughout the winter season. This simple Blueberry topping is super simple and easy to make. Enjoy on toast or cheesecake, or of course pancakes like me this morning. 

Ingredients:



3 cups blueberries, divided


⅓ cup sugar


3 tsp lemon juice


7 Tbs water, divided


2 Tbs corn starch


add some finely grated lemon zest if you wish

Instructions: Heat a saucepan over low/medium heat. Stir 2 cups of blueberries, sugar, lemon juice, 3 tablespoons water into pan and bring to a boil.

Let boil for 3-4 minutes, then add remaining 1 cup of blueberries. Stir.

Mix 4 tablespoons water and corn starch together. Add to blueberries and stir. Continue cooking until sauce thickens. Remove from heat and either serve warm over pancakes, etc., or cool and use for toppings on cheesecakes, etc.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
