Flavoured Pasta Doughs


Did you know there's such a thing as CHOCOLATE PASTA! How the hell did I not know this? I can't even explain how good this is. it's like Prince Charming just rolled up at your door to take you to the ball and he looks like Channing Tatum. Huh, I guess I can explain it...

This is for when you're using a mixer and pasta attachments. If you're doing it old school just add the liquids to the eggs and the powders to the flour before mixing. 

Garlic: Crush 2 to 3 garlic cloves, mix in with the eggs. Herb: Mix ½ cup of finely minced herbs in with the eggs. A single herb or any combination of two or more herbs can be used. Some of the herbs that work well in flavoring pasta are sage, thyme, parsley, cilantro, chives, rosemary, tarragon, basil, and oregano. Garlic & Herb: Mix ¼ cup of finely minced herbs and 1 or 2 crushed garlic cloves in with the eggs. Lemon: Mix 1 ½ to 2 tablespoons of lemon zest or 3 tablespoons of lemon juice in with the eggs. If using lemon juice, you will need to add a little more flour to prevent the dough from being too sticky. (Add pepper if you want) Chocolate: Mix 2/3 cup of unsweetened cocoa powder in with the flour. Add ¼ cup of confectioners' sugar and 1 teaspoon of vanilla in with the eggs. If the dough is too dry, add a teaspoon of water at a time until the dough is the proper consistency.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
