Simple Charcuterie Flatbreads

I love tapas. I love cheese boards. I love Charcuterie trays. I live and eat like life is a buffet and I may not get to taste anymore delicious tidbits. Could you imagine never having cheese again? Oh hell naw!

You can put almost any combination of things you love on a flatbread. The choices are as limitless as your creativity

Makes 2

Ingredients:


  • 1/4 cup store bought tapenade (or homemade), divided

  • 2 pieces flatbread (or naan), lightly toasted

  • 6 ounces thinly sliced prosciutto (or another cured meat of choice), divided

  • 4 ounces of your favourite cheese

  • 2 tablespoons crushed pistachios

  • crushed red pepper flakes, optional

  • honey

Instructions: 1. Spread 2 tablespoons tapenade onto each piece of flatbread and top with prosciutto. Top each with a piece or shavings of cheese. And a sprinkle of pistachios.

2. Sprinkle each flatbread with crushed pepper flake if using and drizzle each with honey.

Hey there, welcome to my little slice of the internet! A little about me to let you get to know me better.

 

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off). When I'm not whipping up healthy meals, you'll find me in the garden playing plant parent or out on an adventure, probably getting lost on purpose.
