BACON WRAPPED STUFFED JALAPENOS


These are so frigging tasty! The dip is great as a stand alone but when added to the Bacon Wrapped Stuffed Jalapeños it's simply divine. 

Bacon Jalapeño Dip (on its own)

INGREDIENTS:


8 ounces cream cheese (room temp)


1 cup mayonnaise


1 cup sharp cheddar


3 diced green onions


1 diced jalapeno *omit if making stuffed jalapeños 


8 slices of cooked bacon, chopped into small pieces

INSTRUCTIONS:

1. Mix together cream cheese and mayo until smooth. Add diced green onions, jalapeños & cheese. 

2. Spread in a pie pan; top with chopped bacon. 3. Bake at 350 for 20-25 minutes. 

Bacon Wrapped Stuffed Jalapeños 

INGREDIENTS:


10 jalapenos


20 pieces of uncooked bacon



Bacon Jalapeño Dip

INSTRUCTIONS: 1. Make the dip as same as above, omitting diced jalapeno. 2. Cut jalapenos in half and scoop out seeds. If jalapenos are really hot, soak them in cool water for 30 minutes, drain and dry. 3. Cut each slice of bacon into two pieces. 4. Scoop a tablespoon of the mixture into the jalapenos. Smooth down mixture so it’s not overflowing from the sides.

5. Place two half pieces of bacon side by side. Place the jalapeno, cream cheese side down, in the middle of the bacon slices. Wrap the jalapeno with bacon and set on a tray seam side down. (Optional: place a toothpick through to keep bacon more secure.) 

6. Preheat a grill and layer with foil. 7. When the grill is hot, place the jalapenos seam side down on the foil. 8. Cook until bacon is golden brown, rotating until each side is cooked (about 2-3 minutes on each side). Turn carefully because sometimes bacon sticks to foil. 9. Remove from grill; let cool.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
