Egg-in-a-Hole Peppers


I usually pre cook my bacon for the week. It makes assembling dishes like this even faster in the morning. Plus I hate cleaning grease off my stove all the bloody time. 

You can swap out the bacon with low fat ham or chicken bacon if you wish. 

Serves: 4

INGREDIENTS:


4 bell peppers (assorted colors), tops and seeds removed


1 c. shredded Cheddar


4 slices bacon, cooked and chopped


kosher salt


Freshly ground black pepper


4 large eggs


Freshly chopped parsley, for garnish

DIRECTIONS: Preheat oven to 400º. In each bell pepper half, add cheddar and cooked bacon. Crack an egg on top and season with salt and pepper.

Bake until whites are cooked and yolks slightly runny, 20 to 25 minutes.

Garnish with parsley.

I come from a family of farmers and my grandfather was also a market farmer way back in the day. My grandmother raised 12 children on the family farm and had a green thumb a mile long. She was a queen of preserving food and man could she make a mean sweet cornbread. I still miss her everyday.

 

I  am also a retired personal trainer and nutritionist, but don’t worry—I promise not to count your calories (unless it’s pizza, then all bets are off).
